I’ve always found cooking to be extremely therapeutic. Maybe it’s because it forces me to focus on something other than the day to day worries in life, maybe it’s the aromas, or the excitement of trying something new. Regardless of the reason, I’ve always felt like cooking is an amazing way to relieve stress and relax with my family. My girls love to cook with dad, but they are still young so I’m always thrilled when I can put something together that is easy for them to help out with. In this recipe they had a blast flattening out the chicken, adding the ingredients inside and rolling them up. In hindsight, I would have taken another pass at flattening the chicken since I think they were still a little thicker than I would have liked, which means less room for the stuff inside. However, it still turned out to be a great dish.

- Cook Time: 30 minutes
Stuffed Chicken with Mozzarella, Roasted Peppers and Spinach
- Place single chicken breast in a ziplock bag and flatten it using a rolling pin or mallet
- Add spinach, mozzarella cheese and roasted red peppers to chicken and roll it up using toothpicks to hold it together
- Season with salt and pepper
- Turn the Ninja Cooking System on to high heat and add 2 tbsp of Olive Oil
- Allow the system to heat up and sear all sides of the chicken
- Remove chicken and add 2 cups of chicken broth to the cooking system
- Add the roasting rack in and place the chicken on top
- Change the heat setting to oven at 350°
- Cook for 28-35 minutes
- Add tomato sauce and more mozzarella on top during the last 10 minutes of cooking
Tip: if the broth evaporates just add a little more until the meat is done

- Olive Oil - 2 tbsp
- Chicken Broth - 2 cups
- Baby Leaf Spinach - 2 cups
- Roasted Red Peppers - 3-4 tbsp
- Mozzarella Cheese - 2-3 cups
- Tomato Sauce - 1 can
